You scroll the aisles looking for some sort of healthy chocolate alternative to put in your Halloween jars, but when you flip the prepackaged, processed candy over, you read all sorts of weird chemicals, artificials, refined sugars, and junk. Our Homemade Peanut Butter Cups covered in chocolate are a perfect treat to get all the Halloween feels but leave the processed stuff on the shelves.
All these peanut butter cups take are 4 simple, real ingredients. Just because you’re enjoying some of the seasonal treats, it doesn’t mean you have to sacrifice all of your nutritional guidelines. And trust us, these cups are spooky good.
Healthy Chocolate Almond Butter Cups
8 oz of dairy free chocolate chips
1 tbsp melted coconut oil
½ c chilled almond butter
1 tbsp ground Chia seeds
pinch fine grain Himalayan salt
Line a mini muffin tin with paper cups.
In a bowl add almond butter, ground Chia seeds, and a pinch of sea salt. Stir well and place to the side.
Melt chocolate. pour about a teaspoon of melted chocolate into mini muffin cups then carefully use a spoon to paint the chocolate up the sides.
Place the tray into the fridge to let the chocolate set, about 5-10 minutes.
Roll the almond butter mixture into 12 equal sized balls. Place into the center of the molds and press down.
Drizzle the remaining melted dark chocolate over almond butter filled molds, cover completely.
Place in the fridge until hard, for at least 20 minutes. Once set, top with a pinch of Himalayan salt.
